Handmade Pasta Cooking Class in Bologna
Roll fresh pasta by hand in Paola's kitchen, in the heart of Bologna. Not a school, not a restaurant: the home kitchen of a real sfoglina (Bologna's traditional pasta-maker), where you learn fresh pasta the way it has been made here for generations — with the rolling pin, on the wooden board, no rush.
In about 2 hours, with your hands in the dough from the very first minute, you will learn to:
- roll the sfoglia by hand with the pin, like a true Bolognese sfoglina;
- shape tagliatelle and fold tortelloni one by one;
- the little tricks you will not find in videos: the right thickness, moisture, timing and gestures.
Then everyone sits down together to eat what you made with your own hands, with a glass of wine and a proper tiramisù — the way every lunch ends in a Bolognese home worth its name.
