Roll fresh pasta by hand in Paola's kitchen, in the heart of Bologna. Not a school, not a restaurant: the home kitchen of a real sfoglina (Bologna's traditional pasta-maker), where you learn fresh pasta the way it has been made here for generations, with the rolling pin, on the wooden board, no rush.

In about 2 hours, with your hands in the dough from the very first minute, you will learn to:

  • roll the sfoglia by hand with the pin, like a true Bolognese sfoglina;
  • shape tagliatelle and fold tortelloni one by one;
  • the little tricks you will not find in videos: the right thickness, moisture, timing and gestures.

Then everyone sits down together to eat what you made with your own hands, with a glass of wine and a proper tiramisu, the way every lunch ends in a Bolognese home worth its name. You also take home the recipe, to make it again whenever you like.

What our guests say

"Our time with Paola was exceptional. Her home was intimate and welcoming. My husband does little to no cooking and was nervous, and he felt welcomed and confident. Our meal was delicious."

Mike and Mariah

"How lucky of us to find Paola! A beautiful day learning how to make 'real' Bolognese sauce and creating beautiful pasta, capped off with a lovely lunch served in her beautiful home."

Marti and Robert · Florida, USA

"Paola gently guided us through the pasta-making process, and showed us how to make the BEST tiramisu we have ever had."
